Cabbage – and our favourite recipes for it

There has been a lot of cabbage available in the UK, due to low demand throughout the summer months. And because we always aim to rescue UK produce over imports, you may have seen more cabbage in your boxes lately. 

Warm weather in July combined with all the rain we had has produced bigger cabbages. Recently, we rescued savoy cabbages that were deemed 'too big', so supermarkets didn’t want them. 

Cabbage comes in plenty of colours and varieties - whether it's white, green, savoy, red, napa or even bok choi. They all have their own unique flavours too. Different types of cabbage are in season at various times of the year in the UK, bringing in a pretty much all-year-round harvest. When experimenting with cabbage recipes, don't worry too much about the type of cabbage you have - just try them out. Here are our favourite recipes for cabbage. 

Cabbage with too many logo

OKONOMIYAKI

Okonomiyaki are delicious Japanese fritter-style pancakes you can make using a whole head of cabbage. Try this recipe from Oddbox chef Georgia using up 2 eggs and 4 spring onions (or 60g leeks) too

BRAISED RED CABBAGE WITH APPLES

For a dish that takes a few minutes to prepare, and two hours of simply waiting for it to cook, try braising red cabbage with apples. This BBC recipe will use up 2 apples, 1 onion and sultanas or raisins too.

WHOLE ROASTED CABBAGE

If you’re not feeling a whole load of veg prep on a weekday evening, roast a whole cabbage with a marinade and stock. For the stock, you’ll use up 1 red onion and 1 garlic clove. Here's the recipe from our Oddbox Chef Camille.

SAUERKRAUT

Sauerkraut is a great place to start with fermenting cabbage. This sauerkraut recipe from the BBC is so simple, it uses only four ingredients - sea salt, black peppercorns, caraway seeds and of course, cabbage.

SAVOY CABBAGE WITH OATMEAL

Ever thought of combining cabbage with oatmeal? This recipe from Delicious Magazine uses up 1 carrot, 3 celery sticks, 1 shallot (or another onion), 1/3 of a leek and 2 garlic cloves for an aromatic side dish that may just surprise you.

KIMCHI
