Upside Down Cheesy Leek Tart
A fun and easy way to cook with leek, this upside down leek tart is easy to make and only requires a handful of ingredients.
Substitutes:
- No egg? Use milk of choice instead.

Ingredients:
2 Leeks
1 tbsp Olive oil
1 tbsp Unsalted butter (cut into small cubes )
½ tsp Dried thyme
3 tbsp Parmesan (grated )
1 ready rolled puff pastry
1 Egg (beaten)
Recipe:
- Preheat the oven to 180C/160c fan/4 gas mark. Cut off the green part of the leeks, reserve for another recipe. Cut the leek into small chunks. And rinse under cold water to wash off any dirt. Set aside.
- Line a baking tray with baking paper. Place a plate upside down and mark a circle with a pencil. Flip the baking paper on the other side so that the food is not in contact with the pencil.
- Drizzle the oil onto the baking paper within the circle, then add the cubed butter, thyme, salt and pepper.
- Lay the leeks on top of the oil, then sprinkle with parmesan.
- Using the same plate as before, cut out a circle into the puff pastry. Place over the leeks and brush with egg wash.
- Bake for 30-35 minutes, until the pastry is golden brown. Remove from the oven and set aside for 5 minutes, then carefully flip onto a large plate. Peel back the baking paper and serve.
How to store
Store in an airtight container, in the fridge, for up to 3 days.
