Easy Carrot Fritters

These easy carrot fritters use only five ingredients and are ready in 30 minutes. They make a delicious vegetarian starter, side dish or snack. Perfect on their own or dipped in yoghurt, chilli jam or any dip of your choice. The recipe makes six fritters but you could make them smaller to have more and serve them as canapés.

Substitute:

  • No curry paste? Try with chilli paste, curry powder or ground cumin. 
  • No coriander? Swap for parsley or rocket. 
  • No lemon? Try with lime instead.

Ingredients:

220 g Carrot (grated)

1 Medium egg

60 g Plain flour

1 tbsp Mild curry paste

2 Garlic cloves (grated )

15 g Coriander (chopped )

Salt & pepper

2 tbsp Olive oil (for cooking )

For dipping:

150 g Natural Yoghurt

10 g Coriander leaves

2 tbsp Lemon juice

1 tsp Ground cumin

Recipe:

  1. In a bowl, add the carrot, egg, flour, curry paste, garlic, coriander and a pinch of both salt and pepper. Mix well until combined.
  2. Take a heaped tablespoon of the mixture, gently roll and flatten slightly with your hand.
  3. Heat the olive oil in a non-stick frying pan. Cook the fritters for about 4 minutes on one side, then turn them over and cook for a further 4-5 minutes or until golden and crispy.
  4. Make a super easy yoghurt dip by mixing together the yoghurt, chopped coriander, ground cumin and lemon juice. Season to taste with salt and pepper.
  5. Serve the fritters, warm or cold, with the yoghurt dip. Enjoy!

How to store

Store in the fridge for up to 3 days, or in the freezer for up to 1 month.
