Sugared Plum Pudding

A delicious one pan bake showcasing layers of buttered croissant topped with plum halves, cinnamon, flaked almonds and brown sugar. This decadent dessert can be made ahead of time and reheated. Delicious served straight out of the oven with a dollop of coconut yoghurt, custard and/or vegan ice cream.

Substitutes:

  • No plums? Try with peaches or apricots instead.
  • No croissants? Use brioche instead.

Ingredients:

3 Plums

2 Vegan croissants

6 tbsp Vegan butter

4 tbsp Flaked almonds

1 tsp Ground cinnamon

2 tbsp Brown sugar

Recipe:

  1. Preheat the oven to 180C/160c fan/4 gas mark. Cut each croissant into 4 slices. Halve the plums and discard the stones. 
  2. Lay the croissant pieces cut side up into a small baking dish, pressing the pieces snugly together so the dish is completely covered.
  3. Lightly melt the vegan butter, pour and brush all over the croissant pieces, then sprinkle the flaked almonds all over.
  4. Place the plums cut side up, and again arrange snugly together so the dish is filled with fruit. Sprinkle the brown sugar and cinnamon over the plums.
  5. Bake for 35-40 minutes, until the plums are tender cooked and start to release their juices. Serve warm straight from the oven.

How to store

Cover and store your uncooked pudding in the fridge, for up to 3 days. Bake when ready to eat.
