Spring Onion and Goat Cheese Toast Muffins
These "muffins "are super quick and fun to make – and there's no muffin batter involved! For this recipe, you'll just push a slice of soft white bread into the holes of a muffin tin, then you add goat cheese (or vegan cheese), chopped spring onions, an egg and seasonings. Bake them for 15 minutes for a perfect savoury breakfast or quick lunch.
Substitute:
No spring onions? Use chopped leeks, mushrooms or tomatoes.
No goat cheese? Swap for mozzarella or camembert.
No paprika? Use cayenne pepper, ground cumin or ground coriander.

Ingredients:
4 slice Soft sliced loaf
50 g Goat cheese
25 g spring onions
4 eggs
1 tsp smoked paprika
salt & pepper
Recipe:
Preheat the oven to 180 C/160 fan/gas mark 4. Use a rolling pin to flatten the bread slices.
Push a slice of soft white bread into the holes of the muffin tin. If the slices are too big, you can cut them to fit the tin.
Into each muffin cup, add the cheese, chopped spring onions, an egg, paprika, salt and pepper.
Bake for 12-15 minutes, until the egg white is cooked and the yellow soft or cooked to your liking.
