Spring Onions and Goat Cheese Toast Muffins
Super quick and fun to make little “muffins”. No muffin batter required, for this recipe you push a slice of soft white bread into each hole of the muffin tin, then you add goat cheese/vegan cheese, chopped spring onions, an egg and seasonings. The “muffins” are baked for 15 minutes and are perfect for a savoury breakfast or quick lunch!
Substitute:
No spring onions? Use chopped leeks, mushrooms or tomatoes instead.
No goat cheese? Try with mozzarella or camembert instead.
No paprika? Use cayenne pepper, ground cumin or ground coriander instead.

Ingredients:
4 slice Soft sliced loaf
50 g Goat cheese
25 g Spring onions
4 Eggs
1 tsp Smoked paprika
Salt & pepper
Recipe:
- Preheat the oven to 180 C/160 fan/4 gas mark. Use a rolling pin to flatten the bread slices.
- Push a slice of soft white bread into each hole of the muffin tin. If the slices are too big cut to fit the tin.
- Into each muffin cup, add goat cheese/vegan cheese, chopped spring onions, an egg, paprika, salt and pepper.
- Bake for 12-15 minutes, until the egg white is cooked and the yellow soft or cooked to your liking.
- Enjoy!
How to store
Store in an airtight container, in the fridge for up to 3 days.
