Peanut Glazed Swede & Chilli Noodles

This simple peanut butter glaze recipe will give your root veg tonnes of extra flavour. Serve with sesame, garlic, ginger and side of noodles or rice. You can add any extra veg, such as spinach or shredded cabbage.

Substitute:

  • No swede? Use parsnips, carrots or turnips. 
  • No maple syrup? Swap it for honey. 
  • No spring onions? Use fresh coriander. 
  • No lime juice? Use lemon juice. 
  • No fresh chilli? Use chilli flakes.

Ingredients:

1 Swede

250 g Ready cooked noodles

3 tbsp Vegetable oil

For the glaze:

4 tbsp Peanut butter

4 tbsp Soy sauce

3 tbsp Maple syrup

4 tbsp Sesame oil

1 tbsp Ginger (grated )

2 Garlic cloves (grated )

For serving:

3 Spring onions (chopped )

1 Chilli (sliced )

1 Lime (juiced )

1 tbsp Sesame seeds

Recipe:

  1. Cut the swede into small cubes - no need to peel it.
  2. Boil the swede in salted boiling water for 5-8 minutes, or until tender. Drain and set aside.
  3. In a mixing bowl, combine all of the ingredients for the glaze.
  4. Heat the vegetable oil in a frying pan over medium heat. Fry the swede until golden, then reduce the heat and pour the glaze all over.
  5. Add the noodles, spring onions, lime juice, chilli and sesame seeds. Toss well to coat and serve.

How to store

Store in an airtight container, in the fridge, for up to 3 days or in the freezer for up to 1 month.
