Our recipe for leftovers & store-cupboard staples - homemade wraps

Every week, we’re going to be asking our wonderful ODDBOX team members to contribute one of their favourite recipes for not just making the most of that week’s fruit & veg, but also help use up any leftovers and store-cupboard ingredients you might have lying around. With everyone spending a bit more time indoors than usual, we’re hoping these weekly recipes will inspire you to get creative with your produce, as well minimise food waste within our homes along the way!

HOMEMADE WRAPS - GREAT SERVED WITH ANY AND ALL LEFTOVERS!

Prep time: 35 minutes

Cook time: 20 minutes

Total time: 55 minutes

Servings: 1

Ingredients:

Makes 2 wraps:

50 ml Water

½ tsp Bicarbonate of soda 

½ tbsp Xanthan gum (this is instead of gluten in case you’re not using strong flours)

150 g Mixed flour (I used spelt, oat and buckwheat)

tbsp Olive oil

Toppings: Whatever you have lying around, I had…

Smoked paprika hummus

Rocket 

1 Bell peppers

1 Carrot

Olive oil

Salt & pepper (and spices)

Recipe:

  1. Mix all the ingredients in a bowl. Add some flour on the work top you’re going to use and carry on mixing. If sticky, add some more flour. Make 2 small balls and flatten them as thin as possible with a rolling-pin.
  2. If you have the time, before rolling them out, let them rest for half an hour. If you don’t have enough time, not to worry - it's not a big deal!
  3. Cook the wraps 3-4 minutes each side in a non-stick pan.
  4. Now stir fry your chopped carrot and pepper/any leftover vegetables from your box, adding some water if it becomes too dry.
  5. Towards the end, add salt, pepper and spices to taste.
  6. Spread the hummus on the wrap, add the rocket and carrot and pepper on the top.
  7. You could also add more spices if you wish. Enjoy it as I did!!
