Mediterranean Aubergine & White Beans

This express aubergine and white beans recipe can be made in 30 minutes. Feel free to swap the veg with whatever you have in your box every week, and use any white beans of your choice.


  • No aubergine? Use courgette, peppers, carrots, cauliflower, squash or mushrooms instead. 
  • No onion? Use shallot instead. 
  • No cannellini beans? Use butter beans or chickpeas instead. 
  • Other additions? If you have any on hand we recommend adding capers or olives.

2 tbsp Olive oil

1 Onion (chopped)

1 Aubergine (cut into small chunks)

100 g Oddbox Mediterranean paste 

1 Can chopped tomatoes

1 can cannellini beans

20 g Parsley (chopped)

Salt & pepper


  1. Add olive oil to a frying pan over a low heat, once hot add the onion and aubergine. Season with salt and pepper. Fry for 10 minutes, until the aubergine has softened a little.
  2. Add the Mediterranean paste, give everything a good stir and cook for 2-3 minutes. 
  3. Add in the chopped tomatoes, beans with their water and stir until all mixed.
  4. Bring to a boil, cover and simmer over a low heat for 15 minutes, until rich and thickened. Season to taste, stir in the chopped fresh parsley and serve.

How to store

Store in an airtight jars, in the fridge for up to 3 days or in the freezer for up to 3 months.
