Rhubarb & Grapefruit Clafoutis
Try this clafoutis cake recipe with any fruit in your Oddbox.

- No rhubarb? Use any fruits you like such as strawberries, blueberries, cherries, apples or pears.

Ingredients:
350 g rhubarb
1 grapefruit
160 g plain flour
60 g corn flour
100 g caster sugar ((plus one extra tbsp for topping))
4 eggs
400 ml milk of choice
a pinch of salt
1 tbsp butter (for the dish)
Recipe:
- Preheat the oven to 200C/180C fan/gas mark 6. Cut the rhubarb into small chunks and segment the grapefruit.
- Mix together the plain flour, corn flour, 90g of the caster sugar and eggs, plus a pinch of salt. Add the milk and mix until combined.
- Butter your baking dish and add the fruit. Add the batter and sprinkle with the leftover sugar.
- Bake for 40 minutes. Once it's ready, remove from the oven and sprinkle over one tbsp of sugar while the clafoutis is hot. Allow to cool, then enjoy.

Store in an airtight container at room temperature for up to 3 days.
