French Toast with Maple Caramelised Pears 

The ultimate breakfast recipe, with toasted brioche french toast encasing caramelised pears and maple syrup caramel. 

Substitute:

  • No pears? Use apples, plums, bananas or peaches. 
  • No maple syrup? Try with golden syrup.

Ingredients:

2 Pears

1 Egg

50 ml Double cream

50 ml Milk of choice

1 tsp Vanilla extract

1 tbsp Caster sugar

4 Slices of brioche

tbsp Neutral oil (for cooking )

For the caramel:

50 g Caster sugar

50 ml Maple syrup

100 ml Double cream

15 g Unsalted butter

a pinch of Salt

Recipe:

  1. To make the caramel, heat the sugar and maple syrup in a saucepan over medium heat. Keep stirring with a wooden spoon until it turns a dark amber colour. Add the double cream and cook for 3-4 minutes. Whisk in the butter and pinch of salt, then cook until slightly thickened and golden. 
  2. Cut the pears in quarters, then add them to the caramel and cook for 2-3 minutes over a low heat. Turn off the heat and let the pears sit in the caramel. 
  3. In a large bowl (big enough to fit the brioche slices) add the eggs, double cream, milk, vanilla and caster sugar. Whisk until combined. 
  4. Soak the brioche slices in the batter for 1-2 minutes. You'll need to work in batches for this step.
  5. Heat a large frying pan over medium heat and add the oil. Add the soaked brioche slices to the pan and cook for 2-3 minutes on each side, until golden brown and slightly firm to the touch.
  6. Cut the french toasts in half and serve with the caramelised pears and a drizzle of caramel. Enjoy!

How to store

Store in an airtight container in the fridge for up to 3 days. Reheat in the oven to crisp up again.
