Easy Peeler-Marinated Olives

After a snack? These marinated olives are a great go-to whenever you fancy.

Substitutes? 

  • No easy peelers? Use oranges, clementines or mandarins instead. 
  • No fennel seeds? Use cumin seeds instead.

Servings: 4

Ingredients:

3 easy peelers

150 g pitted green olives (drained weight)

120 ml olive oil

3 garlic cloves (peeled)

½ tsp fennel seeds

Recipe:

  1. Preheat the oven to 180C/160C fan/gas mark 4. Cut the easy peelers into slices 1cm thick, then halve those slices.
  2. Add the slices to a baking dish with the olive oil and garlic cloves. Bake for 15 minutes.
  3. Remove from the oven and add the olives and fennel seeds. Stir well to coat and set aside to cool, then enjoy.
