Creamy and Crunchy Fennel Slaw

This slaw recipe requires minimal ingredients and effort. It's a great side dish, and you can add loads other fruit and veg (like cabbage, apple, pear or carrots), too.

Substitute:

  • No fennel? Use cabbage or carrot instead. 
  • No red onion? Try with shallot instead. 
  • No yoghurt? Use mayonnaise/vegan mayonnaise instead. 
  • No lemon juice? Try with lime juice or red wine vinegar.

Ingredients:

1 Fennel

100 g Cabbages

1 Red onion

4 tbsp Natural Yoghurt (or vegan yoghurt)

1 tsp Dijon mustard

2 tbsp Lemon juice

Salt & pepper

Recipe:

  1. Finely slice the fennel, red onion and cabbage. Place in a mixing bowl.
  2. Add the yoghurt (or vegan yoghurt), Dijon mustard, lemon juice and a pinch of salt and pepper.
  3. Mix well to combine, season to taste and serve.

How to store

Store in an airtight container, in the fridge, for up to 3 days.
