Confit Cherry Tomatoes

This confit cherry tomato recipe only takes 5 minutes to prep, and then you can enjoy tender, juicy flavour one bite at a time. These toms make for a great side dish, but we also love them on toast or with pasta or polenta.

Ingredients:

300 g cherry tomatoes

3 garlic cloves (unpeeled)

3 sprigs rosemary

4 tbsp olive oil

salt & pepper

Recipe:

  1. Preheat the oven to 160C/140C fan/gas mark 3.
  2. Add the rosemary, garlic cloves and cherry tomatoes to a baking dish. Add the olive oil and season with salt and pepper.
  3. Bake for 40 minutes, giving the little bit of a shake halfway through. After 40 minutes, the tomatoes should have collapsed slightly, and the garlic should have softened and lightly caramelised. If you like your tomatoes a little more well-done, roast for further 10 minutes.
  4. Remove from the oven and enjoy hot or cold. Plus if you peel the garlic cloves, you can spread them on toast or add them to any other recipes.

How to store

Store in an airtight container or jar in the fridge for up to 3 days.
