Cheesy Onion & Kale Flapjacks 

Crumbly and cheesy, these savoury flapjacks are the perfect lunchbox snack or morning pick-me-up. You can whip these up with just a handful of ingredients in less than 20 minutes.

Substitutes:

  • No kale? Swap for cavolo nero.
  • No cheddar cheese? Use parmesan, gouda or any other cheese with nutty and sweet flavours.

Ingredients:

1 Onion (finely chopped )

30 g Kale (finely chopped )

115 g Unsalted butter

2 tbsp Plain flour

160 g Rolled oats

6 tbsp Cheddar (coarsely grated )

Salt & pepper

Recipe:

  1. Preheat the oven to 190C/170c fan/gas mark 5. Put the butter and onion in a saucepan and place on medium-high heat for 4-5 minutes, or until the butter has melted and the onion has softened.
  2. Turn off the heat, and add the flour, oats, kale and grated cheese to the pan. Season with salt and pepper and mix well.
  3. Line a square 20 x 20 cm baking dish. Tip the mixture into the tin and press down firmly.
  4. Bake for 25-30 minutes, or until the flapjack is just golden and the cheese has melted. Leave to set and cool for 10 minutes before cutting into 8 bars. The bars will harden as they cool, give them a couple of hours.
  5. Enjoy!
