Broccoli Pizza 

It’s topped with pesto, sundried tomatoes, olives, cheese/vegan cheese, lemon zest and all the bright green broccoli. Make the dough in advance (or buy ready made pizza dough) for a tasty 30 minute meal on the day. Perfect for both al fresco dinner or movie night. 

Substitutes:

  • No broccoli? Try with asparagus, green beans or brussels sprouts instead. 
  • No basil pesto? Blend sundried tomatoes with a splash of water to create a quick tomato base. 
  • Vegan? Use vegan feta or vegan cheese of choice instead. 
  • No olives? Try with capers instead. 
  • No lemon? Use lime instead. 
  • No feta? Try with mozzarella or goat cheese instead.

Ingredients:

1 Broccoli

400 g Ready made pizza dough (or homemade)

6 tbsp Basil pesto

10 Sundried tomatoes

10 Black olives

70 g Feta

1 tbsp Lemon juice

a pinch of Chilli flakes

Olive oil

Salt & pepper

Recipe:

  1. Preheat the oven to 200C/180c fan/6 gas mark. Grease two baking trays with oil and roughly chop the broccoli. 
  2. Add the broccoli to a bowl and drizzle over the lemon juice and 1 tablespoon of olive oil. Season with a pinch of both salt and pepper. Use your hands to mix the broccoli until evenly coated. 
  3. On a lightly floured surface roll out the pizza dough into two thin pizzas.
  4. Transfer the dough to the prepared baking tray. Spread the dough with pesto and sprinkle with chilli flakes to taste. Add the broccoli and scatter over the olives, sun dried tomatoes and crumbled feta. 
  5. Transfer to the oven and bake for 15 minutes, or until the crust is golden and crisp, and the cheese has melted. Remove the pizza from the oven and enjoy!
