Blackberry Bircher
A bircher is a great make-ahead breakfast and a handy recipe to have on hand.
Substitutes:
- No blackberries? Try with strawberries or raspberries instead.
- Vegan? Use milk and yoghurt vegan alternatives.
- No walnuts? Use the nuts/seeds of your choice.
- No apple? Try with pear or half banana (mashed) instead.
- No maple syrup? Use honey instead.
- No flax seeds? Try with chia seeds instead.

Ingredients:
150 g Blackberry
1 apple (grated)
65 g porridge oats
2 tbsp flax seed
100 ml milk of choice
2 tbsp maple syrup
6 tbsp natural yoghurt
6 walnuts
Recipe:
Tip the oats and flax seeds into a large mixing bowl.
In a food processor, add the blackberries (save a couple for the topping), milk of choice and maple syrup. Blend until you have a smooth colourful puree.
Pour the blackberry puree in the bowl with the oats. Add the grated apple. Mix until combined.
Layer the blackberry oats and natural yoghurt into individual upcycled jars. Top with a blackberry and walnuts. Cover and reserve in the fridge until ready to eat.

Store in the fridge for up to 2 days.
