Three-Ingredient Strawberry Mousse
This super-simple dessert is a quick, delicious treat, and perfect for using up any strawberries starting to go soft.

Ingredients:
400 g strawberries
100 g caster sugar
300 ml double cream
Recipe:
- Add the strawberries and caster sugar to a food processor or blender, and blend until smooth.
- Whisk the double cream until stiff peaks form. Reserve roughly 4 tablespoons of the strawberry purée in a small dish, then fold the rest through the whipped cream until it turns an even shade of pink.
- Divide the mousse between four small serving glasses or ramekins and leave to chill in the fridge for at least 1 hour.
- Top with some halved strawberries as a garnish, and drizzle over the reserved strawberry purée. Dish up and enjoy.
How to store
The strawberry mousse will keep chilled for up to a day.
