Home with the kids? Whilst drawing, painting and crafting is fun, there’s nothing like getting the little ones (or even big ones) into the kitchen to get all their creative juices going, with the end result being a delicious masterpiece they can eat right there and then - or even freeze it for future movie-nights.

From children to teens, pizza undoubtedly has to be one of the most popular foods of all time, with the ease at which you can customise the toppings making it ideal for all the picky and non-picky eaters in the family. Not only that, but pizzas are a great way to experiment with all the fruit (we’re looking at you pineapple) and vegetables you have leftover in your Oddbox, fridge, and pantry. Even pre-cooked dishes from last night’s dinner, as well as dried spices and herbs from the store-cupboard can go on top - it’s time to get creative!

This particular dough recipe from our wonderful guest blogger Emma (@elfoodielife) only uses 4 ingredients and doesn’t even require yeast, making it extra convenient to whip up whenever you fancy a slice.

SIMPLE YEAST-FREE PIZZAS

INGREDIENTS:

Pizza Base (per person):

  • 100g Flour
  • 1tsp Baking Powder
  • 1tsp Oil
  • 1/4tsp Salt

Sauce:

  • Tinned Tomatoes / Pesto / Bechamel* (see below for a quick how-to)

Toppings:

  • Anything & everything!

Side Salad (optional):

  • Lettuce Leaves
  • Crushed Hazelnuts
  • Sliced Apple Sticks

    Dressing:
  • 4tbsp Olive Oil
  • 4tbsp Balsamic Vinegar
  • 1tsp Wholegrain Mustard
  • 1tsp Molasses or Sugar

MAKING THE DOUGH:

  1. Add the dry ingredients to a large bowl. Then add water slowly to allow the dough to come together. It shouldn’t be sticky (if it is, simply add a little more flour until the dough comes together into a ball)
  2. Divide the dough so that each person has their own ball, then knead on a floured work-surface for 5 minutes.
  3. Shape the dough into a ball and place on a floured plate.
  4. Set your oven to 200C and add a pizza stone if you have one. If not, don’t worry! You can cook your pizza on a baking tray too. Cook for 12 -15 minutes.
  5. Now, flour the work-surface and roll the dough into a pizza base. Don’t worry about the shape, it will taste delicious regardless of the shape or size. Add the rolled dough to a lightly floured baking tray and top with some deliciousness, you can be as creative as you like here! Don’t be afraid to try new flavours.

    Alternative 2-ingredient base:
In a bowl, add equal parts natural yogurt to flour and mix. That’s it! Ready to roll like any other pizza base.

SIMPLE SAUCES:

  • Bechamel: Melt 1tbsp butter in a pan, then add 1tbsp flour and beat until it comes together. Add a splash of milk and stir, continue to add milk until a delicious and creamy sauce appears. Season with salt and pepper.
  • Don’t have tinned tomatoes? Simply slice a small cross into the base of fresh tomatoes and blanch in boiled water for 5 minutes. Remove carefully and peel off the skins. Then dice and add to a pan with salt and pepper. Simmer and use to top your pizza or put them on fresh! Equally delicious either way.

ONTO OUR TOPPINGS:

  1. We have caramelised onion, mozzarella, tinned tomatoes, goats’ cheese, leeks, left over boiled potatoes and leftover bechamel sauce from the freezer.
  2. The first pizza is topped with tinned tomatoes, slices of goats’ cheese and small scoops of caramelised onion. A classic and fabulous combination.
  3. The second pizza is topped with a bechamel sauce, thinly sliced leeks, mozzarella, slices of leftover boiled potato and fresh tomatoes. This is cheesy and creamy, with fresh bursts of fresh tomato.
  4. We’re serving it alongside a simple lettuce, apple, and hazelnut salad. For the dressing, just mix up the above ingredients and drizzle over!
