Watermelon, Lime & Feta Salad
When it's hot, no one wants to turn the oven on. This cooling combination of watermelon, tangy feta and fresh lime is the perfect no-cook dish for those sticky summer days.

Ingredients:
650 g watermelon
75 g feta (crumbled)
½ lime (juiced)
8 mint leaves (roughly chopped)
1 tbsp extra virgin olive oil
black pepper (to taste)
Recipe:
Cut the watermelon into bite-sized cubes, and add to a large bowl.
Scatter over the crumbled feta and chopped mint leaves.
Drizzle with the olive oil, then squeeze over the lime juice.
Finish with a good amount of black pepper, toss well to coat and serve.
How to store
Store in an airtight container in the fridge for up to 2 days.
