Veggie-Packed Stir Fried Tofu

A colourful, flavour-packed veggie and tofu stir-fry, loaded with fresh vegetables, crunchy beansprouts and a delicious sauce to bring it all together. This recipe is from Janet, an Oddbox community member who makes this dish all the time in her home kitchen. Cheers Janet!

Substitute:

  • Swap the chow mein sauce for satay sauce or sweet and sour sauce.
  • This is a great recipe to use up any veg you have – add whatever needs using. Just try to chop everything to a similar size so it cooks evenly.
  • Swap the grated tofu for beef mince (this is how Janet does it) or, equally, chicken or pork mince would be delicious.

Ingredients:

100 g carrots (sliced)

1 green pepper (sliced)

1 red onion (sliced)

½ white cabbage (shredded)

200 g mushrooms (halved)

2 garlic cloves (chopped)

200 g firm tofu (grated)

1 tbsp sesame oil

120 g chow mein sauce

½ tsp ground ginger

½ tsp garlic powder

½ tsp ground cinnamon

2 tbsp soy sauce

120 g Beansprouts

Recipe:

  1. Cook the vegetables and tofu: Heat a large frying pan or wok with sesame oil over a medium-high heat. Add the carrot, green pepper, red onion, mushrooms, garlic and grated tofu. Stir-fry for 10 minutes, stirring regularly, until the vegetables begin to soften.

  2. Add the seasonings and sauces: Add the chow mein sauce, ginger powder, garlic powder, ground cinnamon and soy sauce. Stir well to evenly coat the vegetables and tofu. If it's too dry, add a splash of water.

  3. Add the cabbage: Stir in the shredded cabbage, then cover the pan with a lid. Cook for another 5 minutes, stirring occasionally, or until the cabbage has softened and the vegetables are fully cooked.

  4. Add the beansprouts: Stir in the beansprouts and cook for 3 minutes, until heated through but still slightly crunchy.

  5. Serve: Divide between two bowls and serve immediately.

How to store

Fridge: Allow the stir fry to cool completely, then store it in an airtight container in the fridge for up to 3 days.  Freezer: Freeze the stir fry in a freezer-safe container for up to 3 months.  To reheat: Defrost overnight in the fridge if frozen, then reheat gently on the hob or in the microwave until piping hot throughout.
