Vegan Strawberry Oat French Toast

Ingredients:
4 Slices of brioche (vegan)
180 ml Minor Figures oat drink
1 tbsp flax seed
1 tbsp corn flour
1 tbsp caster sugar
1 tsp vanilla paste
2 tbsp vegan butter
150 g strawberries (halved)
maple syrup (to serve)
Recipe:
In a shallow bowl, whisk together the Minor Figures oat drink, ground flaxseeds, cornflour, caster sugar and vanilla paste until smooth. Let the mixture stand for 5 minutes so the flaxseeds thicken slightly.
Heat a large non-stick frying pan over medium heat. Then melt half of the vegan butter.
Dip a slice of brioche into the mixture, allowing it to soak for about 10 seconds per side. Lift the bread carefully and let any excess drip off. Then add straight to the pan. Repeat with another slice.
Cook two slices at a time for 3-4 minutes on each side, until golden brown and lightly crisp. Add the remaining vegan butter before cooking the second batch.
Divide the French toast between two plates. Top generously with the sliced strawberries and drizzle with maple syrup. Enjoy!
