Tomato Salsa Lettuce Cups
Light, fresh and full of flavour, these tomato salsa lettuce cups make the most of seasonal tomatoes and you don't even need to turn the oven on. Perfect when the sun is shining and you don't want to be in the kitchen too long.

Ingredients:
400 g tomatoes (usually 2 large tomatoes)
½ red onion (finely chopped)
1 lime
1 tbsp extra virgin olive oil
salt & pepper
100 g baby gem lettuce (usually 1 head)
Recipe:
Dice the tomatoes, chop the red onion and add to a mixing bowl.
Add the lime zest, squeeze in the lime juice and drizzle over the olive oil. Season with salt and pepper, then gently toss to combine.
Arrange the baby gem leaves on a serving platter and spoon the tomato salsa into each leaf.
Serve immediately as a starter or side dish.
How to store
Store the salsa in an airtight container in the fridge for up to 3 days. Assemble with the lettuce leaves when ready to eat.
