Tomato Jalapeno Salsa

Chargrilled tomatoes combined with jalapeño chillies, extra virgin olive oil, lime juice, coriander and red onion to make a smoky salsa. This is best served in big bowls with plenty of tortilla chips for dunking.

Ingredients:

5 Tomatoes (cut in half )

1 Red onion (diced )

1 tbsp  Jalapenos (chopped )

1 Lime (juiced )

4 tbsp Fresh coriander (chopped )

2 tbsp extra virgin olive oil

salt (to taste )

Tortilla chips (for serving )

Recipe:

  1. Put the onion, jalapeno, fresh coriander, lime juice, olive oil and a pinch of salt in a bowl and toss together. Set aside.
  2. Heat a griddle pan or BBQ to hot. Grill the tomatoes, turning until charred. Roughly chop the tomatoes and add to the bowl, toss and leave for at least 30 minutes for all the flavours to meld. Serve with tortilla chips for scooping.
