Tomato Jalapeno Salsa

Chargrilled tomatoes combined with jalapeño chillies, extra virgin olive oil, lime juice, coriander and red onion to make a smoky salsa. For maximum enjoyment, try dishing up in a big bowl with plenty of tortilla chips for dunking.

Ingredients:

5 tomatoes (halved)

1 red onion (diced)

1 tbsp jalapeno (chopped)

1 lime (juiced)

4 tbsp fresh coriander (chopped)

2 tbsp extra virgin olive oil

salt (to taste)

tortilla chips (for serving)

Recipe:

  1. Add the onion, jalapeno, fresh coriander, lime juice and olive oil to a bowl with a pinch of salt. Toss together and set aside.
  2. Heat up a griddle pan or barbecue and grill the halved tomatoes until charred, turning regularly. Roughly chop the tomatoes and add to the bowl, then toss and leave for at least 30 minutes (to allow all the flavours to mix together). Serve with tortilla chips for scooping, and enjoy.
