Summer Melon Salad

Ingredients:

1 Melon (any)

1 tbsp parsley (chopped )

1 tbsp basil leaf (chopped )

2 tbsp Flaked almonds (toasted )

2 tbsp extra virgin olive oil

salt & pepper (to taste )

Recipe:

  1. Cut the melon in half and use a spoon to remove seeds. Use a melon baller to scoop out balls of melon flesh. Alternately, cut the melon into wedges, peel, then cut into bite-sized pieces.
  2. Add the melon into a bowl, along with the parsley, basil, flaked almonds and olive oil. Gently toss to coat and season to taste with salt and pepper.

How to store

Store in an airtight container, in the fridge, for up to 2 days.
