Summer Melon Salad

Ingredients:

1 melon (any)

1 tbsp parsley (chopped)

1 tbsp basil leaf (chopped)

2 tbsp flaked almonds (toasted)

2 tbsp extra virgin olive oil

salt & pepper (to taste)

Recipe:

  1. Cut the melon in half and use a spoon to remove the seeds. Use a melon baller to scoop out balls of melon flesh. If you haven't got a melon baller, cut the melon into wedges, peel them and cut the melon into bite-sized pieces.
  2. Add the melon to a bowl with the parsley, basil, flaked almonds and olive oil. Gently toss to coat and season to taste with salt and pepper. Enjoy.

How to store
