Summer Melon Salad

Ingredients:
1 melon (any)
1 tbsp parsley (chopped)
1 tbsp basil leaf (chopped)
2 tbsp flaked almonds (toasted)
2 tbsp extra virgin olive oil
salt & pepper (to taste)
Recipe:
- Cut the melon in half and use a spoon to remove the seeds. Use a melon baller to scoop out balls of melon flesh. If you haven't got a melon baller, cut the melon into wedges, peel them and cut the melon into bite-sized pieces.
- Add the melon to a bowl with the parsley, basil, flaked almonds and olive oil. Gently toss to coat and season to taste with salt and pepper. Enjoy.
How to store
Store in an airtight container in the fridge for up to 2 days.
