Spicy Melon Salsa with Lime & Jalapeno

This spicy salsa packs a punch of flavour! Enjoy with tortilla chips as a snack or as a side.

Substitutes: 

  • No melon? Try with peach, nectarine or mango instead. 
  • No lime? Use lemon instead.

Ingredients:

1 melon (cantaloupe)

1 lime (juiced )

1 tbsp jalapeño

1 red onion

1 tsp olive oil

30 g coriander

salt (to taste )

tortilla chips (to serve)

Recipe:

  1. Peel, deseed and dice the melon into small cubes of about 1 cm.

  2. Finely chop the jalapeño, red onion, and coriander.

  3. In a large bowl, combine the melon, jalapeño, red onion and coriander. Add the olive oil and lime juice. Toss gently to mix and season to taste with salt.

  4. Let it sit in the fridge for about 15–20 minutes so the flavours meld. Enjoy with tortilla chips, tacos, or as a topping for grilled vegetables.
