Spiced Pineapple Crumble

A classic crumble with a twist exotic flavour!

Ingredients:

1 Pineapple

1 tsp Ground cinnamon

150 g Plain flour

20 g Caster sugar

140 g Unsalted butter

Ice cream (optional)

Recipe:

  1. Preheat the oven to 200C/180c fan/6 gas mark. Slice the top and bottom off the pineapple. Stand it upright on a work surface and carefully slice off the skin, cutting from top to bottom and working your way around. Cut the pineapple into quarters lengthways, then slice into 1 cm thick chunks.
  2. In a mixing bowl, mix together the pineapple chunks and cinnamon. Tip into a baking dish and set aside.
  3. Using the same mixing bowl, mix together the flour, caster sugar and butter with your fingertips, until pea-sized lumps form. Scatter the crumble over the pineapple and use your hands to even out the top. Bake for 40-50 minutes, or until the crumble is golden.
  4. Leave to stand for 10 minutes, then serve on its own or with ice cream, if you like.
