Spiced Chickpea & Roasted Veg Flatbreads

These warm flatbreads are topped with creamy hummus, smoky roasted vegetables and crispy chickpeas. They make the perfect quick lunch or easy dinner for all.

Substitute:

  • Don't want to make hummus? Use shop-bought.
  • No peppers? Roast any other veg you like such as courgette or aubergine.

Ingredients:

For the roasted vegetables:

1 bell pepper (chopped)

1 tomato (chopped)

½ tsp smoked paprika

½ tsp ground cumin

1 tbsp extra virgin olive oil

200 g chickpeas (drained weight)

salt (to taste)

For the hummus:

200 g chickpeas (drained weight)

1 tbsp extra virgin olive oil

1 tsp ground coriander

1 tbsp water

salt (to taste)

To serve:

2 flatbreads

2 tsp black olive (chopped)

Recipe:

  1. Roast the vegetables: Preheat the oven to 200C/180C fan/gas mark 6. Place the pepper, tomato and 200g chickpeas on a baking dish. Add the smoked paprika, ground cumin, olive oil and a pinch of salt. Toss well to coat. Roast for 20-25 minutes, turning halfway through, until the vegetables are softened and slightly charred and the chickpeas are golden.

  2. Make the hummus: Add the other 200g chickpeas, olive oil, ground coriander, water and a pinch of salt to a food processor. Blend until smooth and creamy. Add another splash of more water if needed to reach your preferred consistency.

  3. Assemble: Warm the flatbreads in the oven for the final 2-3 minutes of cooking. Spread the hummus over the warm flatbreads. Spoon the roasted vegetables and chickpeas over the top, then finish with black olives, and fresh parsley if you like.

How to store

For best results, store the hummus, roasted vegetables and flatbreads separately and assemble just before eating so the flatbread stays fresh rather than becoming soggy. Hummus: Store in an airtight container in the fridge for up to 3 days. Roasted vegetables & chickpeas: Store in the fridge, in an airtight container, for up to 3 days. Reheat in the oven or air fryer to bring back some crispness. Flatbreads: Store sealed at room temperature for 2 days, or freeze for longer storage.
