Roasted Spring Greens with Whipped Feta
This vibrant recipe pairs tender caramelised greens with a creamy, tangy feta base. It’s a fresh, satisfying side dish that brings bright flavours and beautiful colour to any table.
Substitute:
- No spring greens? Try with green cabbage instead.
- No honey? Use maple syrup or agave syrup instead.
- Vegan? Use vegan feta and agave syrup instead.

Ingredients:
2 spring greens
2 tbsp olive oil
1 tsp lemon zest
salt & pepper
For the whipped feta:
150 g feta
½ lemon (juiced)
1 tbsp honey
1 tbsp olive oil
Recipe:
Preheat the oven to 200C/180C fan/gas mark 6.
Wash and cut the spring greens into quarters lengthwise. Add to a baking dish and drizzle with olive oil. Season with lemon zest and a generous pinch of salt and pepper. Roast for 20-25 minutes, or until tender and lightly golden.
In the meantime, prepare the whipped feta. Add the feta, lemon juice, honey and olive oil to a food processor with a small pinch of salt. Blend until smooth. Add a splash of water if you'd like a smoother texture.
Spread the whipped feta on a serving dish and top with the roasted spring greens. Dish up and enjoy.
