Roasted Plum Compote
Not sure how to use up your plums? If they're unripe or overripe, then this is a seriously handy recipe. Quick and easy to make, add this compote to your porridge or mix it with yoghurt and granola. Delish.
Substitutes:
- No caster sugar? Try brown sugar, agave syrup, honey or maple syrup instead.
- No vanilla? You can experiment with different flavours like grated ginger or orange zest instead.

Ingredients:
500 g plums
30 g caster sugar
1 tsp vanilla paste
For serving (optional):
Greek yoghurt (or yoghurt of choice)
Granola (of choice)
Recipe:
Preheat the oven to 210C/190C fan/gas mark 7. Cut the plums in half and remove the stones.
Add the plums to an ovenproof dish skin side down. Sprinkle the sugar over the plums evenly, then roast until soft and juicy (15-20 minutes).
Blend the plums with the vanilla until smooth. Serve with Greek-style yoghurt and granola, if you like, and enjoy.
How to store
Store in an airtight container in the fridge for up to 5 days, or in the freezer for up to 2 months.
