Quick Tomato & Coriander Salad
Combination of perfectly ripe tomatoes, zesty tang of freshly squeezed lime juice and fresh coriander.
Substitutes?
- No cherry tomatoes? Use any tomatoes you have on hand instead.
- No fresh coriander? Use fresh parsley or rocket instead.
- No lime? Use lemon instead.
- No red onion? Use shallot or spring onions instead.

Ingredients:
300 g cherry tomatoes (cut in half )
½ red onion (thinly sliced )
4 tbsp fresh coriander (chopped )
1 lime (juiced )
2 tbsp extra virgin olive oil
salt & pepper
Recipe:
- To a mixing bowl, add the cherry tomatoes, red onion, fresh coriander, lime juice, olive oil and a pinch of both salt and pepper. Mix well to coat and enjoy!
How to store
Store in an airtight container in the fridge for up to 2 days.
