Plum & Red Wine Sauce

Rich and glossy, this plum sauce goes perfectly with loads of dishes. Delicious with wintery comfort food like mash or roast veg.

Ingredients:

5 plums

1 tbsp olive oil

1 onion (use a small one)

2 garlic cloves

150 ml red wine

320 ml vegetable stock

salt & pepper

Recipe:

  1. Finely dice the onion and peel the garlic (keeping the cloves whole). De-seed the plums and cut into quarters.

  2. Add the onion, garlic and plums to a hot saucepan with the olive oil. Fry on a medium-low heat until softened (about five minutes).

  3. Turn up the heat, add the red wine and simmer for another 5 minutes, until the wine has reduced by half.

  4. Add the stock and a pinch of salt and pepper. Simmer for another 10-15 minutes until the plums are tender and the sauce has thickened a little.

  5. Blend until smooth and season to taste. Serve warm and enjoy.
