Pineapple Fritters

These pineapple fritters are zingy, buttery and utterly delicious! 

Substitutes: 

  • No pineapple? Try with bananas (cut lengthwise), apples, pears or peaches instead. 
  • No butter? Use sunflower or vegetable oil instead. 
  • No lime? Use lemon or orange zest, or any flavouring of your choice instead.

Ingredients:

For the pineapple fritters:

1 pineapple

100 g self raising flour

1 egg (or 1 tbsp flaxseed)

70 ml milk of choice

2 tbsp unsalted butter (for cooking )

For the lime sugar:

1 tbsp caster sugar

1 lime (zested )

Recipe:

  1. In a mixing bowl, add the flour, egg (if vegan, add your flaxseed mixed with a few tbsp of water) and milk of your choice. Mix until combined and set aside.

  2. Peel, slice and core the pineapple into 1.5 cm thick rings.

  3. Add the pineapple rings to the batter and mix until well-coated. At this point some of the pineapple slices might break into smaller pieces.

  4. In another mixing bowl, combine the lime zest and sugar. Set aside.

  5. Melt the butter in a large non-stick frying pan over a medium-high heat. Lift one pineapple ring at a time from the batter and gently place in the pan. Cook the fritters for 3-4 minutes on each side, until puffed and golden. Repeat until you have cooked all the fritters. When cooked, add the fritters to the lime sugar, toss to coat and enjoy!

How to store

We recommend making these fresh for a better result, but the leftovers can be stored in an airtight container, in the fridge for up to 3 days.
