Pear & Orange Glaze Flapjacks

Packed with fresh pear, these flapjacks put a delicious twist on a classic bake. Drizzle with a quick orange glaze, and enjoy in your lunchbox or on the go.

Substitutes? 

  • Gluten free? Use gluten free oats instead. 
  • No pears? Try with apples instead.

Ingredients:

300 g pears (coarsely grated)

90 g unsalted butter / vegan butter

35 g light brown sugar

1 tsp ground cinnamon

150 g porridge oats

40 g pumpkin seeds

20 g chia seeds

100 g raisins

For the icing (optional): 

2 tbsp orange juice (and zest)

4 tbsp icing sugar

Recipe:

  1. Preheat the oven to 180C/160C fan/gas mark 4. Line a square baking tray with baking paper.

  2. Melt the butter, sugar and cinnamon in a large saucepan over a medium heat. Cook for 3-4 minutes, stirring frequently, until the butter has melted.

  3. Stir in the oats, raisins, pumpkin seeds and chia seeds until well mixed. Stir through the grated pear.

  4. Spoon into the prepared tray and smooth over the top. Bake for 30-35 minutes, until lightly golden. Remove from the oven and allow to cool for 10 minutes in the tray, then use a knife to cut into 12 equal-sized pieces. Set aside to cool fully.

  5. In a small bowl, mix together the icing sugar and orange juice and a pinch of the zest. Drizzle over the flapjacks and enjoy.

How to store

Store in an airtight container for up to 3 days, or freeze for up to 3 months.
