Pear & Orange Glaze Flapjacks
These flapjacks are loaded with fresh pear for a delicious twist on a classic bake. Drizzle with a quick orange glaze, and enjoy in your lunchboxes or snacking on the go.

- Gluten free? Use gluten free oats instead.
- No pear? Try with apples instead.

Ingredients:
300 g Pears (coarsely grated)
90 g unsalted butter / vegan butter
35 g light brown sugar
1 tsp ground cinnamon
150 g Porridge oats
40 g pumpkin seeds
20 g chia seeds
100 g Raisins
For the icing (optional):
2 tbsp Orange juice (and zest)
4 tbsp Icing sugar
Recipe:
Preheat the oven to 180C/160c fan/4 gas mark. Line a square 20 cm baking tray with baking paper.
Melt the butter, sugar and cinnamon in a large saucepan over medium heat. Cook for 3-4 minutes, stirring frequently, until the butter has melted.
Stir in the oats, raisins, pumpkin seeds and chia seeds, until well mixed. Stir through the grated pear.
Spoon into the prepared tray and smooth the top with the back of a spoon. Bake for 30-35 minutes, until lightly golden. Remove from the oven and let cool for 10 minutes in the tray, then use a knife to cut into 12 equal-sized pieces and set aside to cool fully.
In a small bowl, mix together the icing sugar and orange juice and a pinch of the zest. Drizzle over the flapjacks.

Store in an airtight container for up to 3 days, or freeze for up to 3 months.
