Odds and Ends Sofrito

These sofrito cubes are perfect for using up any veg odds and ends - you can throw them into pasta sauces or soup bases whenever you fancy.

Ingredients:

½ red onion

½ onion

1 celery stick

1 carrot

1 garlic clove

Recipe:

  1. Cut your veg into large chunks.

  2. Add the veg to a food processor. Blend until finely chopped.

  3. Divide the veg between slots in an ice cube tray. Freeze until you're ready to use them. Enjoy.
