No-cook Creamy Cucumber Salad
Mix finely-sliced cucumber with fresh herbs, red onion, crème fraîche, red wine vinegar, mustard and black pepper for a lovely light bite.

Ingredients:
1 cucumber
1 tbsp dill (fresh)
1 tbsp chives (fresh)
2 tbsp crème fraîche (or vegan alternative)
½ red onion
1 tbsp red wine vinegar
1 tsp whole grain mustard
1 tbsp extra virgin olive oil
salt & pepper
Recipe:
- Thinly slice the cucumber using a mandolin or a sharp knife. Add the cucumber to a sieve over a bowl, and season with a little salt. Mix to coat and set aside. They will soften up, with some of the excess cucumber water dropping into the bowl.
- Roughly chop the dill and chive and finely slice the red onion. Add to a large mixing bowl along with the red wine vinegar, mustard and olive oil. Season with a pinch of black pepper. Mix well then add the crème fraîche.
- Squeeze any excess water out of the cucumber before adding it to the bowl. Mix well and season to taste. Then dish up and enjoy!
