Melty Apple & Brie Puff Pastry Parcel

This is a simple sweet and savoury bake that looks really impressive. Think sweet baked apples, creamy melted Brie, flaky pastry and a drizzle of honey. Perfect as a cosy starter or as a delicious nibble alongside a cheeseboard.

Substitutions

  • No brie? Camembert works too.
  • No apple? Try with pears.
  • Don't have thyme? Swap for rosemary.

Tip: once the parcel is sealed, chill in the fridge for 30 mins before baking to ensure no cheese leaks out and for maximum puff.

Ingredients:

1 apple (or two small)

½ pre-rolled sheet of puff pastry

200 g brie cheese

2 tbsp honey

1 tsp fresh thyme

1 egg (beaten for egg wash)

black pepper

Recipe:

  1. Start by thinly slicing the apple. Preheat the oven to 200C/180C fan/gas mark 6. Line a baking tray with baking paper. Unroll the puff pastry and place it on the tray.

  2. Pop the brie in the centre of the pastry, leaving a border around the edges. Top with sliced apple, drizzle with honey, and sprinkle with thyme and black pepper.

  3. Fold the pastry edges over the filling, creating a rustic parcel. Pinch the edges together to seal, then brush the pastry with beaten egg.

  4. Bake for 25-30 minutes, or until the pastry is deeply golden and crisp, and the brie is melted and gooey.

  5. Let it cool for a few minutes before serving. Finish with an extra drizzle of honey, fresh thyme and a sprinkle of sea salt. Serve warm on its own, with a crisp salad or alongside crackers and chutney. Enjoy!

How to store

Store any leftovers in an airtight container in the fridge for up to 2 days. Reheat in the oven or air fryer at 180°C for 6-8 minutes, until the pastry is crisp and the brie is warmed through. Try to not reheat in the microwave as it can turn the pastry soggy.
