Lettuce Grilled Cheese

Try this quick grilled cheese sandwich stuffed with melting cheese and juicy lettuce.

Substitutes:

  • No lettuce? Try with kale, parsley or cabbage. 
  • No cheddar? Use any hard cheese of your choice such as comte, emmental or gruyere. 
  • No spring onions? Use parsley instead. 
  • Vegan? Use vegan cheese and vegan butter.

Ingredients:

lettuce (shredded )

4 tbsp Cheddar (grated )

2 tbsp Parmesan (grated )

1 tbsp Spring onions (sliced )

1 tsp Smoked paprika

1 tsp Mustard (any)

4 tbsp Unsalted butter

4 Slices of sourdough bread

Black pepper

Recipe:

  1. In a mixing bowl, combine the shredded lettuce, cheese, spring onions, mustard, smoked paprika and black pepper.
  2. Spread butter on one side of each slice of bread.
  3. Flip two of the slices of bread and top with the cheese mixture. Place the other slices of bread on top, butter side up.
  4. Heat a large skillet or frying pan over a medium heat. Place the sandwiches in the pan and cook for about 2-3 minutes on each side, until golden and crispy. Cut in half and serve hot with a side of salad, if you like.

How to store

Store in an airtight container, in the fridge for up to 3 days. Reheat in the oven for 10 minutes.
