Lemony White Bean & Rocket Salad
This simple no-cook salad is complete with hearty white beans, crisp rocket, lemon and Parmesan for a really quick, really delicious lunch or side. This keeps well so you can make ahead and take for lunch the next day.

Ingredients:
60 g rocket
1 can cannellini beans (usually 400g, drained)
1 lemon (juiced)
1½ tbsp extra virgin olive oil
2 tbsp parmesan (grated)
salt & pepper
Recipe:
To a large bowl, add the cannellini beans and rocket.
Add the lemon juice and olive oil, then gently toss to coat.
Fold through the grated Parmesan.
Season to taste with flaky sea salt and plenty of black pepper.
Divide between two plates and enjoy!
How to store
Store in an airtight container in the fridge for up to 2 days. If you are planning on keeping it for longer, keep the rocket apart until the last moment so it doesn't wilt too much.
