Classic Jacket Potato
Make the most of the baking potatoes in your Oddbox with this simple, cosy, comforting jacket potato recipe. Serve with homemade baked beans, leftover greens, grated cheddar or any topping of your choice.

Ingredients:
2 baking potatoes
1 tbsp olive oil
1 tbsp unsalted butter
2 tbsp cheddar (grated)
1 can haricot beans
2 tbsp tomato paste
salt & pepper
Recipe:
Preheat the oven to 220C/200C fan/gas mark 8. Prick the potatoes with a fork a couple of times on each side and rub with the olive oil until well coated. Place them on a baking dish and season with a generous pinch of salt. Bake in the oven for 1 hour 30 minutes - 2 hours, depending on the size of the potatoes. You know they're ready when they're golden brown and crisp on the outside, but tender when you put a knife through the middle.
While the potatoes are baking, drain the haricot beans. Place them in a small saucepan with the tomato paste and 2 tablespoons of water. Mix well and cook on a medium-low heat for 5-10 minutes, until piping hot. Season to taste.
To serve, plate up the potatoes and use a knife to split them in half. Use a fork or spoon to fluff up the potato flesh. Melt a teaspoon of butter on each potato and top with your homemade baked beans, leftover greens (if you have some to hand) and grated cheddar. Enjoy!
How to store
Store in an airtight container in the fridge for up to 3 days. You can freeze the cooked potatoes for up to 2 months. To freeze a jacket potato, let the potato cool fully, then wrap in cling film and place in an airtight container or freezer bag. Avoid freezing with toppings for best textures. Reheat from frozen in the oven or microwave for a quick meal.
