How to Prepare Globe Artichokes

Ingredients:

2 Globe artichokes

1 lemon

Recipe:

  1. Remove the hard outer leaves of the artichokes. Using a bread knife, cut along the top half of the head and discard any hard leaves below. You should now be holding just the cup and stem.

  2. Press a teaspoon into the furry center (the choke). Scoop out all the fur and discard. Immediately rub with lemon to stop discolouring.

  3. Remove the stem and peel off any green outer skin, whilst working round the outside with a vegetable peeler. Once this layer has been removed, again rub with lemon to stop discolouring.

  4. Keep your artichokes in lemony water, then boil or steam until tender.
