Honey-Glazed Radishes with Balsamic

Take your radishes to the next level - add rich, caramel-esque flavour by cooking them in a savoury honey and balsamic glaze. The naturally peppery radishes mix with subtle sweetness to give you all-round deliciousness. If you're after something more substantial, pair it with Greek yoghurt or whipped feta and crusty bread. Yum.

Ingredients:

20 radishes

1 tbsp olive oil

a pinch of sea salt

2 tbsp unsalted butter

1 tbsp balsamic vinegar

1 tbsp runny honey

1 tbsp water

1 tbsp parsley

Recipe:

  1. Preheat the oven to 200C/180C fan/gas mark 6. Wash the radishes in cold water then trim (remove the tops and roots).

  2. Heat the olive oil in an oven-proof frying pan over medium heat. Add the radishes and a pinch of sea salt. Cook for 5 minutes, stirring occasionally, until they begin to lightly colour.

  3. Add the butter, balsamic vinegar, honey and water. Toss to coat evenly. Transfer to the oven and roast for 15 minutes, or until the radishes are tender and the sauce has reduced and become glossy.

  4. Remove from the oven and stir gently to coat the radishes in the caramelised glaze.

  5. Serve warm as a side dish, or alongside Greek yoghurt or whipped feta with crusty bread. Finely chop the fresh parsley and sprinkle over just before serving.
