Grilled Courgette, Chickpea & Feta Salad
A light and flavourful salad featuring smoky grilled courgette, hearty chickpeas and tangy feta. Perfect for a refreshing summer meal.

Ingredients:
2 courgettes
1 can chickpeas (drained )
a bunch of parsley (chopped )
150 g feta (crumbled )
½ lemon (juiced )
extra virgin olive oil
salt & pepper
Recipe:
- Cut the courgettes in half lengthwise and use the tip of a knife to cross cut into the flesh. Drizzle with olive oil and season with a pinch of both salt and pepper.
- Place a grill pan over a medium-high heat and wait 2-3 minutes, until the grill is hot.
- Place the courgettes cut side down on the grill and cook for 5 minutes, or until golden brown. Flip the courgettes on their other sides and cook for another 5 minutes, until tender.
- Remove the courgettes from the pan and cut into chunks. Add to a large mixing bowl, along with the chickpeas, parsley, feta, lemon juice, a drizzle of olive oil and a pinch of both salt and pepper. Toss well to coat and serve.
How to store
Store in an airtight container in the fridge for up to 3 days.
