Easy Peelers Marinated Olives

These marinated olives are the perfect all year round snack!

Substitutes? 

  • No easy peelers? Use oranges, clementines or mandarins instead. 
  • No fennel seeds? Use cumin seeds instead.

Ingredients:

3 Easy peeler

150 g Pitted green olives (drained weight)

120 ml olive oil

3 garlic cloves (peeled)

½ tsp Fennel seeds

Recipe:

  1. Preheat the oven to 180C/160 c fan/4 gas mark. Cut the easy peelers into 1 cm thick slices, then cut them in half.
  2. Add the easy peeler slices to a small baking dish, along with the olive oil and garlic cloves. Bake for 15 minutes.
  3. Remove from the oven and add the olives and fennel seeds. Stir well to coat and set aside to cool.

How to store

Store in an airtight container, in the fridge, for up to 7 days.
