Crunchy Cabbage Salad with Dijon-lime Dressing

Ingredients:
½ red cabbage (shredded)
1 carrot (grated)
1 red pepper (sliced)
3 tbsp parsley leaf (roughly chopped)
3 tbsp dill (roughly chopped)
3 spring onions (sliced)
2 tbsp flaked almonds (toasted)
For the dressing:
1 tsp Dijon mustard
1 lime (juiced)
1 garlic clove (grated)
4 tbsp extra virgin olive oil
salt & pepper (to taste)
Recipe:
- Add the cabbage, carrot, red pepper, parsley, dill and spring onion to a large mixing bowl and set aside.
- Add the Dijon mustard, lime juice, garlic and olive oil to a small bowl. Whisk the ingredients together and season with a generous pinch of salt and pepper.
- Pour the dressing over the salad and toss to combine. If you have the time, give the salad 30 minutes to an hour in your fridge, so that the flavours can develop and the cabbage can soften up a little.
- Give the salad one more toss and serve garnished with the remaining flaked almonds. Enjoy!
How to store
Store in an airtight container, in the fridge for up to 3 days. If crunch is important to you, store the salad and dressing separately.
