Chicory and Lentil Salad with Almond Herb Dressing

Ingredients:
400 g chicory
200 g cooked puy lentils
For the dressing:
½ lemon (juiced)
20 g basil leaves
20 g parsley
20 g flaked almonds
1 tsp Dijon mustard
3 tbsp extra virgin olive oil
salt & pepper
Recipe:
- Cut the chicory into quarters lengthwise. Add to a large bowl along with the lentils.
- Add all of the dressing ingredients to a food processor and blend until smooth. Season to taste with salt and pepper.
- Pour the dressing over the chicory and lentils and mix well to coat. Serve and enjoy!
How to store
Store in an airtight container in the fridge for up to 3 days.
