Chicory and Lentil Salad with Almond Herb Dressing

Ingredients:
400 g chicory
200 g cooked puy lentils
For the dressing:
½ lemon (juiced)
20 g basil leaves
20 g parsley
20 g flaked almonds
1 tsp Dijon mustard
3 tbsp extra virgin olive oil
salt & pepper
Recipe:
Cut the chicory into quarters lengthwise. Add to a large bowl along with the lentils.
Add all of the dressing ingredients to a food processor and blend until smooth. Season to taste with salt and pepper.
Pour the dressing over the chicory and lentils and mix well to coat. Serve and enjoy!
How to store
Store in an airtight container in the fridge for up to 3 days.
