Chicory Lentil Salad with Almond Herb Dressing

Ingredients:
400 g Chicory
200 g Cooked puy lentils
For the dressing:
½ lemon (juiced )
20 g basil leaves
20 g parsley
20 g Flaked almonds
1 tsp Dijon mustard
3 tbsp extra virgin olive oil
salt & pepper
Recipe:
- Cut the chicory in quarters lengthwise, then place into a large bowl along with the lentils.
- Add all of the dressing ingredients into a food processor and blend until smooth. Season to taste with salt and pepper.
- Pour the dressing over the chicory and lentils, and mix well to coat. Serve and enjoy!
How to store
Store in an airtight container, in the fridge, for up to 3 days.
