Cheese Toastie with Tamarind & Tomato Chutney

This is the ultimate cheese toastie: crispy golden sourdough, gooey melted cheese and a spoonful of sweet, tangy Tamarind & Tomato Chutney. The perfect café-style lunch with a punchy twist.

Substitute:

  • No sourdough? Use any good quality bread — thick slices work best.
  • No cheddar? Try a mix of mature cheese, Gruyère, Red Leicester or Comté.
  • No mozzarella? Use another melty cheese like fontina or a little extra cheddar.

Ingredients:

4 slices of sourdough bread

100 g cheddar

50 g mozzarella

30 g butter

2 tbsp Oddbox Tomato & Tamarind Chutney

1 tsp English mustard (optional)

a pinch of black pepper

Recipe:

  1. Mix the grated cheddar and mozzarella together.

  2. Butter one side of each slice of sourdough. Spread the unbuttered side of two slices with English mustard, if using.

  3. Top with the cheese mixture, a generous spoonful of Tamarind & Tomato Chutney and a sprinkle of black pepper. Place the remaining slices of bread on top, butter-side facing out.

  4. Heat a frying pan over a medium-low heat. Add the toasties and cook slowly for 4–5 minutes on each side, pressing gently, until the bread is golden and crisp and the cheese has melted.

  5. Slice in half and serve immediately.
