Carrot & Apple Coleslaw

A great side dish for BBQs and picnics, that can be made ahead of time.

Substitutes? 

  • No dill? Use parsley instead. 
  • Vegan? Use vegan mayonnaise and yoghurt instead. 
  • No apple cider vinegar? Use white wine vinegar or red wine vinegar instead.

Ingredients:

4 Carrots (grated )

1 Apple (grated )

2 tbsp Dill (chopped )

100 g Greek yoghurt

50 g Mayonnaise

1 tbsp Apple cider vinegar

1 tsp Dijon mustard

salt & pepper

Recipe:

  1. To a large mixing bowl, add the yoghurt, mayonnaise, apple cider vinegar, dijon mustard and a generous pinch of both salt and pepper. Mix well to combine.
  2. Add the grated apple, grated carrot and dill to the bowl. Stir well to coat and season to taste with more salt and pepper if needed.

How to store

Store in an airtight container, in the fridge, for up to 3 days.
