Carrot & Apple Coleslaw

This is a great side dish for BBQs and picnics, and you can even make it ahead of time to save yourself the stress.

Substitutes? 

  • No dill? Use parsley instead.
  • Vegan? Use vegan mayonnaise and yoghurt.
  • No apple cider vinegar? Use white wine vinegar or red wine vinegar.

Servings: 4

Ingredients:

4 carrots (grated)

1 apple (grated)

2 tbsp dill (chopped)

100 g Greek yoghurt

50 g mayonnaise

1 tbsp apple cider vinegar

1 tsp Dijon mustard

salt & pepper

Recipe:

  1. Add the yoghurt, mayonnaise, apple cider vinegar and Dijon mustard to a large mixing bowl, plus a generous pinch of salt and pepper. Mix well to combine.
  2. Add the grated apple, grated carrot and dill to the bowl. Stir well to coat and season to taste. Then dish up and enjoy.
