Broccoli Stalk Slaw with Tahini Dressing
A quick recipe full of flavour and crunch to make the most of your broccoli stalks.
Substitutes:
- No mayonnaise? Use greek-style yoghurt instead.
- No lemon? Use lime instead.
- No parsley? Try it with coriander, dill or chives.
- No tahini? Use ½ teaspoon of Dijon mustard instead.

Ingredients:
1 carrot
1 apple
2 Broccoli stalks
1 tbsp mayonnaise (or vegan mayo)
1 tbsp tahini
1 tsp olive oil
½ lemon (juiced )
15 g parsley (chopped )
salt & pepper
Recipe:
Grate the apple and carrot on a box grater into a big bowl.
Cut off the outer edges of the broccoli stalks and slice into thin batons. Add to the bowl.
Add the mayonnaise, tahini, lemon juice, olive oil and a pinch of both salt and pepper. Mix well until everything is evenly coated in dressing. Season to taste and enjoy!
How to store
Store in an airtight container, in the fridge, for up to 3 days.
