Braised Spring Greens
Braised until tender and topped with lemon juice, this is a great side dish for any roast dinner.

Ingredients:
a bunch of spring greens (sliced)
1 onion (chopped)
1½ tbsp olive oil
salt & pepper
150 ml vegetable stock
½ lemon (juiced)
Recipe:
- Heat the oil in a high-sided frying pan over a medium heat. Fry the onion until fragrant (about 3 minutes).
- Add the spring greens and stock and cook, stirring regularly, until the greens are tender and the stock has nearly cooked away (5-6 minutes). Squeeze in the lemon juice and season to taste, then dish up and enjoy.
How to store
Store in an airtight container, in the fridge, for up to 3 days.
