Three-Ingredient Strawberry Mousse
This super-simple dessert is a quick, delicious treat, and perfect for using up any strawberries starting to go soft.

Ingredients:
400 g strawberries
100 g caster sugar
300 ml double cream
Recipe:
Add the strawberries and caster sugar to a food processor or blender, and blend until smooth.
Whisk the double cream until stiff peaks form. Reserve roughly 4 tablespoons of the strawberry purée in a small dish, then fold the rest through the whipped cream until it turns an even shade of pink.
Divide the mousse between four small serving glasses or ramekins and leave to chill in the fridge for at least 1 hour.
Top with some halved strawberries as a garnish, and drizzle over the reserved strawberry purée. Dish up and enjoy.
How to store
The strawberry mousse will keep chilled for up to a day.
